Hello! After a loooong break, I’m back. I have not been cooking at all & I am so sorry. Mostly, I am sorry for my husband who has been having popcorn for dinner most nights. Cooking has been the last thing I wanted to do since I found out that I’M PREGNANT. While I haven’t been cooking in the kitchen, I’ve had something else cooking in my belly.

Hi! Long time, no see. I have been BUSY. Don’t you hate it when life gets away from you? I feel like I blinked, and we’re almost half way through March.
Super Bowl Comfort
So… our team lost the Super Bowl. It was a sad, sad Sunday in our house. I was fresh off of a plane, and got home around kick off, so I was not in charge of game day snacks. However, come Monday, hubby and I needed some comfort food.

Sweet Potato Gnocchi
As you already know, my husband loves sweet potatoes. He’s also Italian. We also love having yummy, warm, hearty suppers on Sundays (duh). SO, put all of those together and we get: sweet potato gnocchi for dinner last night.
Turkey Meatballs

My husband is very much Italian. My mother-in-law makes the best meatballs, short ribs, sauce, manicottis, the whole nine yards. I have ventured into making my own pasta (post coming soon!) and such to try to fill the void in my husband’s life of not having homemade Italian food. So far, so good. These meatballs, however, I have been making for years. They are SO basic. Not your nonna’s meatball recipe by any stretch, but they are quite delicious, super lean protein, and extremely easy to make!
Set it & forget it: Chicken & Rice

So, Texas is in a deep freeze. I did not move here for deep freezes, I moved here to avoid them. And yet, here we are. On top of that, hubs and I went GOLFING on Sunday when it was 35 degrees out. Luckily, I put something in the crock pot before hand so we would have something warm to heat up our tummies after!

I hope everyone had an amazing holiday season and are looking forward to the new year as much as I am! 2017 was amazing. I mean hi, we got married & bought a house. BUT it was so busy that I feel like I was always on the go. As awesome as all of the experiences were… I am worn out! I am looking forward to relaxing in 2018, enjoying & celebrating others (we have about 7 weddings on the horizon) and falling into my new role as a wife!
Easy Green Chicken Chili
You all already know, I hate Mondays. Actually, I hate mornings, and Mondays are the morning of the whole week. Throw in a sinus infection and a long weekend in Nashville, and this Monday was not looking good.
Monday Night Meals: Chili Verde Chicken

Monday night is not my night for cooking. I want something quick and easy, but flavorful and filling. This chicken hits the spot. I served it with rice and black beans, and topped with a little guacamole.
